Chef Edward Villarreal wasn’t coy or cagey when talking about the unique ingredient seasoning the elegant plates during a recent multicourse dinner at his restaurant.
It’s cannabis.
But not like you’re thinking. Check your Cheech & Chong stereotypes at the door. Villarreal is a serious chef making serious food at his establishment, MxiCanna Cafe, which he opened in February with business partners Luis Maldonado, Mark Trias and Adam Montalvo.
“Our idea is cannabis with class. We really focus on the health and wellness aspect of it,” Villarreal said. “To MxiCanna Cafe, cannabis is like truffles. It accents the food but isn’t the main ingredient.”
