
If you’re looking for a perfectly runny yolk and fluffy egg whites then you need to follow this recipe for over easy eggs!
To cook eggs over easy, heat your pan over medium/low heat and then crack in your eggs. Cook for 2 minutes and then flip and cook for 30 more seconds.

There are many ways you can whip up eggs in the morning, but over-easy eggs are one of our favorites! They have an irresistible oozy yolk perfect for enhancing many different meals (+ not just breakfast!).
If you’ve never made an over-easy egg, don’t fret. We tested this recipe with a variety of different fats and pans to make sure you have over easy success every time.
The winners? –> butter and a nonstick pan.
What You Need for Over Easy Eggs
- Large eggs: any size will do, but be mindful that smaller eggs will cook faster than large ones!
- Unsalted butter: we prefer unsalted butter since we’re serving these over easy eggs with salt. If you’re using salted butter, be mindful that you may not need to add salt when serving.
- Nonstick pan: we’re giving a full rundown of the pans we tested below, but a nonstick was the ultimate winner because the eggs don’t stick.
- Nonstick spatula: we found that a nonstick spatula such as a rubber spatula was easier to use than a wooden or tin one.
Using butter will leave you with a nutty-flavored egg and minimal browning — that’s what we used in these photos. However, oil such as olive, avocado, or vegetable will work, too. But, do note that it will change the taste and appearance of the over-easy eggs.
For instance, if you use avocado oil or olive oil, you will be left with a bubbly egg white with those burned, crispy edges that some people adore in a fried egg.

While the non-stick pan gave us the best results, you can use a variety of different pans to cook your egg over easy. If you plan to use a cast iron or stainless steel, here are some tips:

These over-easy eggs are best enjoyed immediately, but should you have leftovers, you can store them in the fridge in an airtight container for 3 days. They are great as leftovers for making an egg salad!

- 4 large eggs
- 2 tablespoons unsalted butter
- Heat a non-stick frying pan over medium/low heat (8-inch or 10–inch work best). Add butter.
- When the butter has melted, crack the eggs into the pan. Try not to overcrowd the pan with more than 2 eggs.
- Cook the eggs over medium/low heat for 2 minutes or until the egg white begins to set, but isn’t completely cooked.
- Use a spatula to flip the eggs and let them cook for an additional 30 seconds to allow the white to cook but not the yolk. The yolk should be runny.
- Remove the eggs from the pan and repeat with the remaining eggs.
- Remove the eggs from the pan and enjoy with salt and pepper.
- We tested this recipe with large eggs. A medium egg or extra large egg will have a different cook time.
- Times may vary depending on the stovetop. The goal is for the white to cook enough to flip and barely let the egg stay in the skillet. The goal is just to allow the yolk to become stable enough to move to a plate but stay runny.
