When you think of Pico de Gallo, your first thought isn’t probably that you’ll scoop some mangoes with your chips!

But this sweet and savory mango pico hits the spot and pairs perfectly with my favorite mango rosemary margarita!

I used my mango simple syrup recipe with fresh lime juice as a light dressing and loved the way it enhanced the mango and let the flavors pop.

The best part for me was using Truvia Sweet Complete Granulated All-Purpose Sweetener to bring all of the flavors together.

How to make Mango Pico de Gallo

This recipe just requires a knife, cutting board, and a bowl, and it’s quite simple to put together.

In a medium-sized bowl, add diced mango, red onion, lime juice, cilantro, and red pepper.

Drizzle one tablespoon of mango simple syrup on top and toss the Pico to combine all ingredients.

Then, mix everything together to let the flavors meld and chill in the fridge for 20 minutes.

You can scoop it up with tortilla chips, or eat it by a spoonful. I also LOVE this Pico on fish like salmon or cod.
