Just thinking about warm weather makes me want to plan a healthy gluten-free BBQ.
Pulling out my recipes for grilling steak, chicken, vegetables and all the fixins’ reminds me of long summer days eating healthy food with family and friends.

Barbecue or Barbeque or BBQ?
Do you spell it Barbecue, Barbeque, or use the abbreviated BBQ? I’m a fan of BBQ.
According to Miller the word “barbecue” is an adjective, noun, verb, and way of life!
What is BBQ?
But what is BBQ? Miller, one of my favorite cultural and culinary historians, states that the origins of barbecue are cooking techniques rooted in Native American culinary tradition prior to European contact.
Native American Origins of BBQ
Enslaved African Americans took what they learned from Native Americans to become “barbecue’s primary experts and ambassadors” across the US and later the world.
The word barbecue is derived from barbacoa, a sixteenth-century all-purpose term referring to everything from a bed, to a table or platform or grill. “Eventually, Spaniards used barbacoa as a generic term for the cooking apparatus, the cooking process, and the type of meat cooked this way.”
Miller goes on to state that the “English followed suit with this linguistic promiscuity.”
Anyway, before we go on to the BBQ recipes, I want to tell you that this book is a must-read.
